Preparing the Chicken

Marinate the Chicken
In a large bowl, mix the boneless chicken thighs with salt and black pepper. Let it marinate for at least 30 minutes.

Prepare the Breading
In a shallow dish, combine all-purpose flour and cornstarch. In another bowl, beat the eggs.

Bread the Chicken
Dip each piece of marinated chicken in the egg mixture, then coat it in the flour-cornstarch mixture. Ensure each piece is fully coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the breaded chicken pieces to the hot oil in small batches. Fry until golden brown and cooked through, about 5-7 minutes per batch. Remove and place on a paper towel to drain excess oil.
Making the Miyos Original Sauce

Combine Ingredients
In a saucepan, combine soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, and minced ginger.

Cook the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar is dissolved and the sauce thickens slightly, about 5-7 minutes.

Finish the Sauce
Remove from heat and stir in sesame seeds and sliced green onions.
Assembling the Plate

Plate the Chicken
Arrange the fried chicken pieces on a serving plate.

Glaze with Sauce
Drizzle the Miyos original sauce generously over the fried chicken.

Garnish with additional sesame seeds and green onions if desired, and serve immediately.
