Preparation

    Prepare the Seafood

    Clean and devein the shrimp, pat dry. Rinse the scallops and squid, and cut the squid into rings. Cut the white fish fillet into bite-sized pieces.

    Prepare the Vegetables

    Chop the napa cabbage into large pieces, slice shiitake mushrooms, julienne the carrots, and chop the green onions. Cut the tofu into cubes.

    Make the Broth

    In a large pot, bring the dashi stock to a simmer. Add soy sauce, mirin, salt, and pepper. Stir well and let it simmer for about 5 minutes.

    Cook the Seafood

    Add the shrimp, scallops, squid, and fish fillet to the broth. Cook for 3-5 minutes until the seafood is cooked through and opaque.

    Add the Vegetables

    Add the napa cabbage, shiitake mushrooms, carrots, and tofu to the pot. Let it simmer for another 5-7 minutes, or until the vegetables are tender.

Serving

    Garnish and Serve

    Ladle the soup into bowls, drizzle with sesame oil and chili oil to taste, and top with fresh cilantro and green onions. Serve hot.
