Seafood Preparation

    Cook the Seafood

    In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the opakapaka fillets and salmon. Cook for about 3-4 minutes on each side until cooked through. Remove from the skillet and allow to cool.

    Sauté the Shrimp and Scallops

    In the same skillet, add the shrimp and scallops. Sauté for about 2-3 minutes until they are pink and opaque. Remove from heat and let cool.

Salad Assembly

    Prepare the Salad Base

    In a large salad bowl, combine the mixed greens, finely chopped lemon grass, and sliced red onion. Toss gently to combine.

    Add the Seafood

    Flake the cooled opakapaka and salmon into bite-sized pieces. Add the shrimp and scallops to the salad bowl.

    Mix the Dressing

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper until well combined.

    Combine and Serve

    Pour the dressing over the salad and toss gently to coat all ingredients. Add the fresh herbs on top. Serve immediately.
