    Prep the Vegetables

    Peel and dice the potatoes into small cubes. Chop the celery into small pieces.

    Prepare the Seafood

    If using whole clams, scrub them clean under cold water. Cut the ono fish into bite-sized pieces.

Cooking

    Make the Base

    In a large pot, melt the butter over medium heat. Add the chopped celery and sauté until it is slightly softened, about 3-4 minutes.

    Add the Potatoes

    Add the diced potatoes to the pot and stir, cooking for another 5 minutes.

    Add the Broth

    Pour in the fish stock and bring to a simmer. Cook for about 15 minutes until the potatoes are tender.

    Incorporate the Seafood

    Add the ono fish, snow crab meat, and clams to the pot. Stir gently and simmer for another 5-7 minutes, until the clams open and the fish is cooked through.

    Finish with Cream and Seasonings

    Stir in the heavy cream, salt, black pepper, and dried thyme. Allow to simmer for an additional 2-3 minutes.

Serving

    Serve the Chowder

    Ladle the chowder into bowls and serve hot. Enjoy with crusty bread if desired.
