Season the Salmon
Pat the salmon fillets dry with a paper towel. Season both sides of the fillets with salt and black pepper.
Cooking the Salmon

Sauté the Salmon
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside.
Making the Red Curry Sauce

Prepare the Sauce
In the same skillet, reduce the heat to medium and add the red curry paste. Stir for about 1 minute until fragrant. Then, slowly pour in the coconut milk, stirring to combine.

Finish the Sauce
Add the fish sauce, brown sugar, and lime juice to the skillet. Bring the mixture to a gentle simmer, allowing it to thicken slightly for about 3-4 minutes. Stir occasionally.

Add Cilantro
Once the sauce has thickened, stir in the chopped fresh cilantro for added flavor.
Serving

Plate the Dish
Place the sautéed salmon fillets on serving plates and generously spoon the red curry sauce over the top. Serve warm.
