Method
Preparing the Salmon

Marinate the Salmon
In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Coat the salmon fillets with this marinade and let them sit for 15-20 minutes.

Broil or Sauté the Salmon
Preheat the broiler or a skillet over medium-high heat. If broiling, place the salmon on a baking sheet, skin-side down, and broil for about 6-8 minutes. If sautéing, add the salmon to the skillet and cook for about 4-5 minutes on each side until cooked through and flaky.
Preparing the Vegetable Tempura

Prepare the Batter
In a mixing bowl, combine the tempura batter mix with cold water. Stir until just mixed, do not overmix.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Vegetables
Dip the assorted vegetables into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Preparing the Sauteed Eggplant

Slice and Salt the Eggplant
Slice the eggplant into rounds or cubes. Sprinkle with salt and let it sit for about 10 minutes to draw out moisture.

Preparing the Cold Tofu

Prepare the Tofu
Drain the firm tofu and cut it into cubes or slices. Arrange on a serving plate.

Dress the Tofu
Drizzle the soy sauce and sesame oil over the tofu. Sprinkle with chopped green onions and sesame seeds for garnish.
