Preparing the Noodles

    Cook the Noodles

    Bring 4 cups of water to a boil in a large pot. Add the Saimin noodles and cook according to package instructions until tender, usually 3-5 minutes. Once cooked, drain the noodles and set aside.

Making the Broth

    Prepare the Broth

    In a large pot, combine 6 cups of chicken broth, 2 tablespoons of soy sauce, 1 tablespoon of mirin, and sliced ginger. Bring to a gentle simmer over medium heat. Allow the broth to simmer for about 10-15 minutes to let the flavors meld.

    Season the Broth

    Taste the broth and season with salt and pepper to your preference. Remove the ginger slices before serving.

Assembling the Saimin

    Combine and Serve

    In individual bowls, place a portion of the cooked noodles. Ladle the hot broth over the noodles. Top with cooked shrimp, chashu pork, strips of nori, and half a boiled egg. Garnish with additional chopped green onions. Serve immediately.
