Method

Syrup Preparation

  1. 1

    Prepare the Syrup

In a large pot, combine sassafras root, birch bark, brown sugar, granulated sugar, and water. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugars.

  2. 2

    Simmer

Once boiling, reduce the heat and let the mixture simmer for about 30 minutes. This allows the flavors to infuse into the syrup.

  3. 3

    Strain the Mixture

After simmering, remove the pot from heat. Use a fine mesh strainer or cheesecloth to strain the mixture into another pot or bowl, discarding the solids.

  4. 4

    Add Flavorings

To the strained syrup, add the vanilla extract, citric acid, and yeast. Stir well to combine.

  5. 5

    Ferment the Syrup

Cover the pot with a clean cloth and let it sit at room temperature for 24 hours to ferment slightly.

Mixing with Carbonated Water

  1. 6

    Combine with Carbonated Water

After fermentation, gently stir the syrup and then mix it with carbonated water in a large pitcher or glasses. The ratio can be adjusted to taste, usually about 1 part syrup to 4 parts carbonated water.

  2. 7

    Serve

Serve the root beer over ice, if desired. Enjoy your homemade root beer!
