Syrup Preparation

Prepare the Syrup
In a large pot, combine sassafras root, birch bark, brown sugar, granulated sugar, and water. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugars.

Once boiling, reduce the heat and let the mixture simmer for about 30 minutes. This allows the flavors to infuse into the syrup.

After simmering, remove the pot from heat. Use a fine mesh strainer or cheesecloth to strain the mixture into another pot or bowl, discarding the solids.

Cover the pot with a clean cloth and let it sit at room temperature for 24 hours to ferment slightly.
