    Preheat Oven

    Preheat your oven to 325°F (163°C).

    Prepare Pork

    In a large bowl, mix olive oil, garlic powder, onion powder, paprika, salt, black pepper, and thyme. Rub this mixture all over the pork shoulder.

    Roasting

    Place the seasoned pork shoulder in a roasting pan. Add 1 cup of water to the bottom of the pan. Cover with aluminum foil and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 190°F (88°C).

    Resting

    Once done, remove the pork from the oven and let it rest for at least 15 minutes before slicing.

    Collect Drippings

    After removing the pork, pour the drippings from the roasting pan into a measuring cup, allowing the fat to separate.

    Make Roux

    In a saucepan, heat 2 tablespoons of the separated fat over medium heat, add flour, and whisk constantly for about 2 minutes to create a roux.

    Add Broth

    Slowly whisk in the chicken broth and the reserved pork drippings. Continue to whisk until the gravy thickens. Season with salt and pepper to taste.

    Prepare Mashed Potatoes

    While the pork is resting, prepare the mashed potatoes by boiling them in salted water until tender. Drain and mash with butter, salt, and pepper to taste.

    Cook Green Beans

    In a separate pot, steam or boil green beans for about 5-7 minutes until tender. Season with butter, salt, and pepper.
