Prepare the Marinade
In a bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, and black pepper to create the marinade. Whisk together until the sugar dissolves.

Marinate the Ribs
Place the pork ribs in a large resealable bag or container. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag and let them marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Rice
Rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with 4 cups of water. Bring to a boil, reduce the heat to low, cover, and simmer for about 18 minutes or until the rice is tender and the water is absorbed.

Cook the Ribs
Preheat your grill or oven to medium-high heat. Remove the ribs from the marinade, letting excess drip off. Grill the ribs for 20-30 minutes, turning occasionally, until cooked through and caramelized. If using an oven, place them on a baking sheet and bake at 180°C (350°F) for 1 to 1.5 hours, basting with the marinade occasionally.

Prepare Optional Salad or Macaroni
If serving macaroni salad, cook the macaroni according to package instructions, drain, and mix with mayonnaise. For a tossed salad, chop lettuce, tomato, and cucumber and toss together in a bowl.

Serve the grilled ribs on a plate alongside a scoop of rice and your choice of macaroni salad or tossed salad.
