    Prepare the Marinade

    In a mixing bowl, combine the red wine vinegar, honey, soy sauce, Worcestershire sauce, smoked paprika, and cayenne pepper. Whisk until well blended.

    Marinate the Ribs

    In a large resealable plastic bag or a shallow dish, add the lamb ribs and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.

    Preheat the Grill

    Preheat the grill to medium-high heat (about 375°F/190°C).

    Prepare the Ribs

    Remove the lamb ribs from the marinade and pat them dry with paper towels. Brush each side with olive oil and season generously with minced garlic, chopped rosemary, thyme, salt, and black pepper.

    Grill the Ribs

    Place the lamb ribs on the grill bone-side down. Cook for about 5-7 minutes per side, turning occasionally, until the ribs are nicely browned and have grill marks. Lower the heat if necessary to avoid burning.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. Lamb ribs are best enjoyed medium-rare to medium, which is around 145°F (63°C).

    Rest and Serve

    Once cooked to your liking, remove the ribs from the grill and let them rest for 5 minutes. Cut between the bones and serve warm, drizzled with any leftover marinade if desired.
