Method

Fries

  1. 1

    Preparing Fries

Preheat your oven to 425°F (220°C). Wash the Russet potatoes thoroughly and cut them into even-sized fries, about 1/4 inch thick. Pat them dry with a paper towel.

  2. 2

    Seasoning Fries

In a large bowl, toss the cut fries with olive oil, salt, black pepper, and paprika until evenly coated.

  3. 3

    Baking Fries

Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden and crispy, flipping halfway through.

Garlic Aioli

  1. 4

    Making Aioli

In a food processor, combine mayonnaise, garlic cloves, lemon juice, and Dijon mustard. Blend until smooth.

  2. 5

    Seasoning Aioli

Taste the aioli and add salt and black pepper to taste. Blend again to combine.

  3. 6

    Chilling Aioli

Transfer the aioli to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld.

Dill Pickles

  1. 7

    Preparing Dill Pickles

Wash the dill pickles under cold water. Slice them into spears or rounds, according to your preference.
