    Soak Mung Bean Noodles

    In a bowl, soak the mung bean noodles in hot water for about 15 minutes or until soft. Drain and cut into shorter lengths if needed.

    Mix Filling Ingredients

    In a large mixing bowl, combine the kalua pork, soaked mung bean noodles, julienned carrot, shredded cabbage, chopped green onions, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly distributed.

Spring Roll Assembly

    Prepare Spring Roll Wrappers

    Lay a spring roll wrapper on a clean, dry surface with one corner pointing towards you. Place about 2 tablespoons of the filling mixture near the corner closest to you.

    Roll the Spring Rolls

    Fold the corner over the filling, then fold in the sides tightly and roll away from you to form a tight roll. Seal the edge with a little water.

    Heat Oil for Frying

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

    Fry the Spring Rolls

    Carefully place the spring rolls into the hot oil, a few at a time, without overcrowding. Fry for about 3-4 minutes or until golden brown, turning occasionally for even cooking.

    Drain and Serve

    Remove the spring rolls with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
