Pork Chop Curry

    Heat the vegetable oil in a large skillet over medium heat.

    Season pork chops with salt and black pepper on both sides.

    Add the pork chops to the skillet and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.

    In the same skillet, add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.

    Add the curry powder and chopped bell pepper to the skillet, and cook for another 2 minutes.

    Pour in the coconut milk and chicken broth, stirring to combine. Bring to a simmer.

    Return the pork chops to the skillet, cover, and simmer for 15-20 minutes, until the pork is cooked through.

Rice

    In a saucepan, combine the rice, water, and salt.

Green Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.
