Cooking the Pork Adobo

Cut the pork belly into bite-sized pieces and set aside.

In a large bowl, combine soy sauce, vinegar, crushed garlic cloves, bay leaves, and black peppercorns. Add the pork belly and marinate for at least 30 minutes, or preferably overnight in the refrigerator.

After marination, heat a large pot over medium heat. Add the marinated pork belly (reserve the marinade) and sear until browned on all sides.

Pour in the reserved marinade and add water. Bring to a boil, then reduce heat to low and simmer for 1 to 1.5 hours, or until the pork is tender.

Once the pork is cooked, taste the sauce and adjust seasoning if necessary. Simmer for an additional 10-15 minutes to thicken the sauce.
