Prepare the Steak
Slice the ribeye steak into thin strips against the grain. Season with salt and pepper.

Make the Aioli
In a medium bowl, combine mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning to taste.

Assemble the Cheesesteaks
Slice the hoagie rolls lengthwise without cutting all the way through. Spread a generous amount of garlic aioli inside each roll. Fill each roll with the steak and vegetable mixture. Top with provolone cheese slices.

Melt the Cheese
Place the assembled sandwiches under a broiler for 1-2 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Remove from the broiler, let cool for a minute, and serve hot with extra garlic aioli on the side.
