Preparation of Filling

    Cook the Steak

    In a large skillet over medium-high heat, add olive oil. Once hot, add the thinly sliced ribeye steak. Season with salt and black pepper. Cook until browned and just cooked through, about 3-5 minutes.

    Add Vegetables

    In the same skillet, add the sliced onion and green bell pepper to the cooked steak. Sauté for another 3-4 minutes until the vegetables are soft and slightly caramelized.

    Mix in Cheese

    Lower the heat to medium-low. Add the softened cream cheese and shredded provolone cheese to the skillet. Stir until the cheeses are melted and combined with the steak and vegetables. Remove from heat and set aside.

Assembling Philla-Dillas

    Prepare the Tortillas

    Lay out the flour tortillas on a clean surface. Divide the filling evenly among the tortillas, placing it in the center of each one.

    Fold and Cook

    Fold in the sides of the tortillas, then roll them up tightly from the bottom to the top. Heat a non-stick skillet over medium heat. Place the rolled tortillas seam-side down in the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.

    Slice and Serve

    Once cooked, remove the Philla-Dillas from the skillet. Let cool for a minute, then slice in half and serve with your favorite dipping sauce, such as marinara or ranch.
