Preparing the Rice

Rinse the Rice
Rinse 1 cup of long-grain white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over high heat.

Simmer the Rice
Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork before serving.
Making the Pastele Stew

Brown the Pork
Add 1 lb of ground pork to the pot and cook until browned, breaking it apart with a spoon, about 8-10 minutes.

Add Spices and Tomato Sauce
Stir in 1 cup of tomato sauce, 1 tsp of cumin, 1 tsp of oregano, 1 tsp of black pepper, and 2 bay leaves. Mix well to combine.

Add Broth and Simmer
Pour in 2 cups of chicken broth, bring to a boil, then reduce heat to low and let it simmer for 30 minutes, stirring occasionally.

Finish the Stew
Stir in 0.5 cups of sliced green olives and 2 tablespoons of capers. Cook for an additional 5 minutes to allow the flavors to meld.
