Method

Pastrami Sandwich

    Prepare the Sandwich

    On one slice of sourdough bread, spread the house bourbon pineapple BBQ sauce evenly.

    Layer the Ingredients

    Place the pastrami on top of the BBQ sauce, followed by the cheddar cheese.

    Add Mustard and Onions

    Spread the lilikoi mustard on the second slice of bread, then carefully place the crispy fried onions on top.

    Assemble the Sandwich

    Place the second slice of bread on top of the sandwich, mustard side down. Press down gently.

    Toast the Sandwich

    In a skillet over medium heat, toast the sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to form fries.

    Heat the Oil

    In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches, frying for about 5-7 minutes or until golden brown.

    Drain and Season

    Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.
