    Prepare the Noodles

    Soak the rice vermicelli noodles in warm water for about 20-25 minutes or until softened, then drain and set aside.

    Prepare the Vegetables

    Chop the broccoli into small florets, julienne the carrot and bell pepper, and chop the green onions into 1-inch pieces.

    Prepare the Protein

    Slice the chicken breast into thin strips and beat the eggs in a small bowl.

    Mince the Garlic

    Peel and finely mince the garlic cloves.

Cooking

    Cook the Chicken

    In a large wok or skillet over medium-high heat, add a tablespoon of oil. Add the sliced chicken and stir-fry for about 3-4 minutes until cooked through. Remove from the pan and set aside.

    Stir-fry the Vegetables

    In the same wok, add a little more oil if needed. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the broccoli, carrot, and bell pepper. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

    Add the Noodles

    Add the soaked noodles to the wok with the vegetables, tossing to combine.

    Add Sauces

    Pour in the soy sauce, oyster sauce, sesame oil, and sprinkle with sugar and black pepper. Toss everything together to ensure the noodles and vegetables are well coated.

    Add Eggs and Chicken

    Push the noodle mixture to the side of the wok. Pour the beaten eggs into the empty side and scramble until just set. Then mix them into the noodles along with the cooked chicken.

    Finish with Bean Sprouts and Green Onions

    Finally, add the bean sprouts and green onions, stir-frying for another minute until everything is heated through.
