Soak the Rice Noodles
In a large bowl, soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into small cubes.

Chop Vegetables
Finely chop the garlic, slice the green onions (keeping the white and green parts separate), and julienne the carrot.
Cooking

Cook the Tofu
In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove and set aside.

Sauté Shrimp
In the same skillet, add a little more oil if necessary and add the shrimp. Cook until they turn pink, about 3-4 minutes. Remove and set aside.

Stir-fry Vegetables
Add the garlic and the white part of the green onions to the skillet. Stir-fry for about 30 seconds until fragrant. Add the julienned carrot and bean sprouts, and stir-fry for another 2 minutes.

Combine Ingredients
Push the vegetables to one side of the skillet. Add the soaked rice noodles and the cooked tofu and shrimp to the other side. Pour the fish sauce, tamarind paste, sugar, and soy sauce over everything. Toss everything together and cook for an additional 2-3 minutes until heated through.
Serving

Garnish and Serve
Remove the skillet from heat. Serve the Pad Thai hot, garnished with chopped peanuts, lime wedges, and fresh cilantro. Enjoy!
