Method

Preparation

  1. 1

    Prepare the Noodles

Soak the wide rice noodles in warm water for about 30 minutes or until they are softened. Drain and set aside.

  2. 2

    Prepare the Sauce

In a small bowl, mix together the soy sauce, dark soy sauce, oyster sauce, sugar, and white pepper. Set aside.

Cooking

  1. 3

    Cook the Protein

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and stir-fry until fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  2. 4

    Stir-fry the Vegetables

In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Then, add the chopped broccoli and julienned carrots, and stir-fry for an additional 3-4 minutes until the vegetables are tender yet crisp.

  3. 5

    Add Noodles and Sauce

Add the soaked noodles to the skillet along with the prepared sauce. Toss everything together to coat the noodles and vegetables evenly with the sauce. Stir-fry for another 2-3 minutes.

  4. 6

    Add Eggs and Chicken

Push the noodle mixture to one side of the skillet. Crack the two eggs into the empty side and scramble them until cooked. Then, mix the scrambled eggs into the noodle mixture along with the cooked chicken. Stir-fry for an additional 1-2 minutes to combine everything well.

Serving

  1. 7

    Serve

Remove the skillet from heat. Serve the Pad See Ui hot, garnished with additional white pepper if desired.
