Preparation of Ingredients

    Prepare Chicken

    Cut the boneless chicken thighs into bite-sized pieces.

    Prepare Chinese Cabbage

    Chop the Chinese cabbage into thin strips.

    Prepare Onion

    Slice the onion thinly.

    Prepare Eggs

    In a bowl, crack the eggs and beat them lightly, set aside.

Cooking

    Make Sauce

    In a pan, combine soy sauce, mirin, sake, sugar, and dashi stock. Bring to a gentle simmer over medium heat.

    Cook Chicken

    Add the chicken pieces to the pan and cook until they are no longer pink, about 5-7 minutes.

    Add Vegetables

    Add the sliced onions and Chinese cabbage to the pan and cook until the cabbage is wilted and the onions are translucent, about 3-4 minutes.

    Add Eggs

    Pour the beaten eggs over the chicken and vegetable mixture. Cover the pan and let it cook for about 2-3 minutes until the eggs are just set.

Serving

    Serve the Oyako-Donburi mixture over bowls of cooked rice.
