Method
Preparation of Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 20 minutes. Remove from heat and let sit, covered, for an additional 10 minutes.

Season the Rice
Fluff the cooked rice with a fork and let it cool slightly. Optionally, mix in a tablespoon of rice vinegar for added flavor.

Slice the Fish
While the rice is cooling, slice the fresh tuna and salmon into bite-sized cubes or strips. Place them in a bowl and set aside.

Prepare Vegetables
Dice the avocado, slice the cucumber thinly, and julienne the radishes. Chop the green onions finely. Set all the toppings aside in separate bowls.
Making Wasabi Aioli

Combine Ingredients
In a small bowl, whisk together the mayonnaise, wasabi paste, lemon juice, and salt until smooth and creamy. Adjust the wasabi amount to taste.

Assemble Your Poke Bowl
In a bowl, start with a base of sushi rice. Top with the cubed fish, avocado, cucumber, radish, and green onion. Drizzle with the wasabi aioli and sprinkle with furikake seasoning. Serve immediately.
