Method

Preparation

  1. 1

    Prepare the Filling

Peel the ripe bananas and mash them in a bowl until smooth. Add the brown sugar, cinnamon, and all-purpose flour. Mix well until all the ingredients are combined.

  2. 2

    Prepare the Wrappers

Lay out one lumpia wrapper on a flat surface with one corner pointing towards you. Place about 2 tablespoons of the banana filling near the corner closest to you.

Wrapping

  1. 3

    Wrap the Lumpia

Fold the corner over the filling, then fold in the sides, and roll tightly away from you. Seal the edge with a little water on your finger to ensure it sticks. Repeat with the remaining wrappers and filling.

Cooking

  1. 4

    Fry the Lumpia

Heat the oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the wrapped banana lumpia in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side.

  2. 5

    Drain and Serve

Using a slotted spoon, remove the fried lumpia from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm, optionally with a scoop of ice cream or a drizzle of chocolate sauce.
