Wonton Preparation

Make the Filling
In a mixing bowl, combine the ground pork, finely chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Wrap the Wontons
Take a wonton wrapper and place a small spoonful of the filling in the center. Moisten the edges with water, fold the wrapper over to create a triangle, and pinch the edges to seal. You can also bring the two corners together to form a traditional wonton shape. Repeat with remaining wrappers and filling.

Prepare the Broth
In a large pot, combine the chicken broth, water, soy sauce, and mirin. Bring to a simmer over medium heat. Taste and adjust seasoning with salt if necessary.

Cook the Noodles
In a separate pot, boil water and cook the saimin noodles according to package instructions. Drain and set aside.

Cook the Wontons
In the same pot used for the noodles, add the wontons to the simmering broth. Cook for about 5-7 minutes or until they float to the surface and are cooked through.

Assemble the Dish
In a serving bowl, place a portion of cooked noodles, ladle the soup with wontons over the noodles, and garnish with chopped green onions and nori strips.
