Noodles Preparation

Cook the Noodles
In a large pot, bring 4 cups of water to a boil. Add the saimin noodles and cook according to the package instructions, usually about 4-5 minutes until tender. Drain the noodles and set aside.

Prepare the Broth
In another pot, combine 6 cups of chicken broth, soy sauce, mirin, ginger, garlic, and salt. Bring to a simmer over medium heat. Allow the broth to simmer for about 10 minutes to let the flavors meld.

Add Vegetables
Add the sliced mushrooms and chopped green onions to the broth. Continue to simmer for an additional 5 minutes, taste and adjust seasoning with salt and pepper as needed.

Assemble the Saimin
In serving bowls, place a portion of the cooked saimin noodles. Ladle the hot broth over the noodles. Top with halved boiled eggs, strips of nori, and sliced chashu pork. Sprinkle with toasted sesame seeds for garnish.
