Method

Prepare Rice

  1. 1

    Rinse and Cook the Rice

Rinse sushi rice under cold water in a sieve until the water runs clear. In a pot, combine rinsed rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and let it sit for 10 minutes.

  2. 2

    Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice sits, fluff it with a fork and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare Proteins

  1. 3

    Chicken Preparation

If using cooked chicken breast, slice it into thin strips and set aside. If desired, marinate briefly in soy sauce.

  2. 4

    Tofu Preparation

For tofu, press out excess moisture, cut into cubes, and either pan-fry in a little sesame oil until golden or leave it raw for a fresh taste.

  3. 5

    Egg Preparation

Peel hard-boiled eggs and cut them in half or quarters, depending on preference.

Prepare Vegetables

  1. 6

    Slice and Prepare Vegetables

Slice cucumber into thin rounds, julienne the carrot into thin strips, and prepare the avocado by slicing it into wedges.

  2. 7

    Prepare Edamame

If using frozen edamame, cook according to package instructions, typically boiling for 5 minutes, then drain and cool.

Assemble Bento

  1. 8

    Assembly

In a bento box or lunch container, first layer the seasoned rice at the bottom. Arrange protein options (chicken, tofu, eggs) neatly on one side. On the other side, place the sliced cucumbers, carrots, edamame, and avocado. Add a small container of soy sauce, sesame oil, and pickled ginger on the side.
