Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Prepare the Marinade

In a small bowl, mix the olive oil, minced garlic, chopped rosemary, salt, and black pepper to create a marinade.

  3. 3

    Marinate the Pork

Rub the marinade all over the pork tenderloin, ensuring it's well coated. For best results, let it marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.

Cooking

  1. 4

    Sear the Pork

In a hot skillet over medium-high heat, sear the marinated pork tenderloin for about 3-4 minutes on each side until browned.

  2. 5

    Roast the Pork

Transfer the seared pork to a baking dish and place it in the preheated oven. Roast for 20-25 minutes or until the internal temperature reaches 70°C (160°F).

  3. 6

    Optional Glaze

If using, mix honey and balsamic vinegar in a small bowl. Brush this mixture over the pork during the last 5 minutes of roasting for added flavor.

Finishing

  1. 7

    Rest the Pork

Remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

  2. 8

    Slice and Serve

Slice the pork tenderloin into medallions and serve warm, optionally drizzled with any remaining pan juices.
