Making Curry Paste

    Toast the Spices

    In a dry skillet over medium heat, toast the coriander seeds, cumin seeds, cardamom pods, cloves, and cinnamon stick until fragrant (about 5 minutes). Stir frequently to prevent burning.

    Soak the Dried Chilies

    Remove the stems from the dried red chilies and soak them in hot water for about 15 minutes until softened.

    Blend the Paste

    In a blender, combine the toasted spices, soaked chilies, shallots, garlic, galangal, lemongrass, kaffir lime leaves, fish sauce, and palm sugar. Blend until a smooth paste forms. You may need to add a little water to facilitate blending.

Cooking the Curry

    Prepare the Chicken

    Cut the chicken thighs into bite-sized pieces.

    Cook the Paste

    In a large pot over medium heat, add the curry paste and cook for 2-3 minutes until fragrant.

    Add Coconut Milk

    Pour in the coconut milk and stir well to combine with the curry paste.

    Add Chicken and Vegetables

    Add the chicken pieces, cubed potatoes, and sliced carrots to the pot. Stir to combine.

    Simmer the Curry

    Bring the mixture to a simmer and reduce the heat to low. Cover and let it cook for about 30-40 minutes until the chicken is cooked through and the vegetables are tender.

    Finish the Dish

    Stir in the roasted peanuts and cook for an additional 5 minutes. Adjust seasoning with more fish sauce or palm sugar if needed.
