Preparing the Lechon

Marinate the Pork
In a large bowl, combine the minced garlic, soy sauce, oregano, salt, and black pepper. Mix well. Add the pork belly and coat it thoroughly with the marinade. Cover and refrigerate for at least 2 hours or overnight for best results.

Roast the Pork
Preheat the oven to 400°F (200°C). Place the marinated pork belly on a roasting pan and drizzle with olive oil. Roast in the preheated oven for about 1.5 to 2 hours or until the skin is crispy and the meat is tender. Baste occasionally with the drippings.

Let it Rest
Once done, remove the lechon from the oven and let it rest for 15 minutes before slicing.
Cooking the Moco

Cook the Rice
In a medium saucepan, combine the white rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit for 5 minutes.

Fry the Eggs
While the rice is cooking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy). Season lightly with salt and pepper.

On a plate, serve a scoop of rice, top with slices of lechon, place a fried egg on top, and drizzle with gravy. Garnish with chopped green onions.
