Method

Lava Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour, tapping out excess flour.

  3. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until melted and smooth.

  4. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the powdered sugar, eggs, egg yolk, vanilla extract, and a pinch of salt until well combined.

  5. 5

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, stirring gently until fully incorporated.

  6. 6

    Add Flour

Sift the all-purpose flour into the mixture and fold gently until just combined. Be careful not to overmix.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  8. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  9. 9

    Cool Slightly

Remove from the oven and let cool for 1 minute before inverting each ramekin onto a plate.

Serving

  1. 10

    Add Ice Cream

Top each lava cake with a scoop of vanilla ice cream while the cake is still warm.

  2. 11

    Serve Immediately

Serve immediately and enjoy the gooey center of the lava cake alongside the cold ice cream.
