Marinade Preparation

Mix the Marinade
In a medium bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, gochujang, rice vinegar, and black pepper. Whisk until the sugar is dissolved and all ingredients are well combined.

Marinate the Pork
Place the pork shoulder or loin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, making sure it's fully coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours or overnight for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Grill the Pork
Remove the pork from the marinade and discard the marinade. Place the pork on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 145°F (63°C).

Rest and Serve
Once cooked, remove the pork from the grill and let it rest for 5-10 minutes before slicing. Serve topped with chopped green onions and toasted sesame seeds.
