Chicken Marinade

    Prepare the Marinade

    In a bowl, combine the soy sauce, gochujang, sesame oil, minced garlic, grated ginger, honey, and black pepper. Mix well to create the marinade.

    Marinate the Chicken

    Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to overnight for better flavor.

Cooking the Chicken

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and allow to rest for a few minutes.

Sandwich Assembly

    Assemble the Sandwich

    Toast the burger buns if desired. Spread mayonnaise on the bottom half of each bun. Layer lettuce, sliced tomato, and cucumber on top, followed by the cooked chicken. If using, add a slice of cheese on top of the chicken. Place the top half of the bun on the sandwich.

    Cook the Macaroni

    In a pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.

    In a large bowl, combine the cooled macaroni, mayonnaise, chopped celery, green onions, salt, and black pepper. Mix until well combined. Chill in the refrigerator until ready to serve.
