Marinate the Chicken
In a mixing bowl, combine the soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Whisk until the sugar is dissolved. Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or overnight for best results.

Cook the Chicken
In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off, and add to the hot skillet. Sear the chicken for about 5-7 minutes on each side, or until golden brown and cooked through.

While the chicken is cooking, pour the remaining marinade into a small saucepan. In a separate bowl, mix the cornstarch with 2 tablespoons of cold water until smooth. Add this mixture to the saucepan and heat over medium heat, stirring constantly until the sauce thickens. Once thickened, remove from heat.
