    Cook the Noodles

    In a pot, bring 4 cups of vegetable broth to a boil. Add the saimin noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Tofu

    While the noodles are cooking, cube the tofu and pan-fry it in a tablespoon of sesame oil until golden and crispy. Remove from the pan and set aside.

    Prepare the Vegetables

    Chop the green onions, julienne the carrot, slice the bell pepper, mince the garlic, and grate the ginger.

    Stir-Fry the Vegetables

    In the same pan used for the tofu, add another tablespoon of sesame oil. Heat over medium-high heat, then add the garlic and ginger. Sauté for about 30 seconds until fragrant, then add the chopped green onions, carrot, and bell pepper. Cook for about 3-4 minutes until the vegetables are tender.

    Add Kimchi and Tofu

    Stir in the chopped kimchi and cooked tofu. Cook for another 2-3 minutes to heat through and allow the flavors to meld.

    Combine with Noodles

    Add the cooked saimin noodles to the pan. Pour in the soy sauce, and sprinkle with red pepper flakes, salt, and black pepper to taste. Toss everything together until the noodles are well coated and heated through.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up or as desired. Season with salt and pepper.

Serving

    Divide the kimchee fried saimin into bowls and top each serving with a fried egg. Garnish with additional green onions if desired.
