Method

Beef Stew Preparation

  1. 1

    Brown the Beef

In a large pot, heat the olive oil over medium-high heat. Add the cubed beef and season with salt and black pepper. Brown the beef on all sides for about 5-7 minutes.

  2. 2

    Add Aromatics

Add the chopped onions and minced garlic to the pot. Sauté for 2-3 minutes until the onions are translucent.

  3. 3

    Add Vegetables and Liquids

Stir in the sliced carrots and diced potatoes. Add the beef broth, tomato paste, soy sauce, and bay leaves. Bring to a boil.

  4. 4

    Simmer the Stew

Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.

Rice Preparation

  1. 5

    Cook the Rice

In a medium saucepan, bring 4 cups of water to a boil. Add the long grain rice and a pinch of salt. Stir once, cover, and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Egg Preparation

  1. 6

    Prepare the Eggs

In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and black pepper, and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Assembly

  1. 7

    Serve the Dish

In a serving bowl, layer the cooked rice, top with the beef stew, and place the eggs over the stew. Enjoy hot!
