Prepare the Chicken Katsu

    Start by pounding the chicken breasts to an even thickness of about 1/2 inch. This helps them cook evenly.

    Season the chicken with salt and black pepper. Set up a dredging station with three plates: one with flour, another with beaten eggs, and the last with panko breadcrumbs. Dip each chicken breast first in the flour, then in the egg, and finally coat with panko breadcrumbs.

    Heat vegetable oil in a large skillet over medium heat. Once hot, add in the breaded chicken breasts. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
