Method

Cooking the Hash

  1. 1

    Heat Olive Oil

In a large skillet, heat the olive oil over medium heat.

  2. 2

    Sauté Vegetables

Add the diced onions and bell peppers to the skillet and sauté for about 5 minutes, or until they become soft and translucent.

  3. 3

    Add Potatoes

Stir in the diced potatoes, salt, and black pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender and golden brown.

  4. 4

    Add Kalua Pork

Add the Kona coffee rubbed Kalua pork to the skillet. Stir well to combine and heat through for about 5 minutes.

  5. 5

    Combine and Set Aside

Once everything is well combined and heated, remove from heat and set aside while you prepare the eggs.

Cooking the Eggs

  1. 6

    Heat Oil for Eggs

In a separate non-stick skillet, use the remaining olive oil and heat over medium-low heat.

  2. 7

    Cook the Eggs

Crack the eggs into the skillet. Cook for about 3-4 minutes for sunny-side up or until the whites are set and the yolks are still runny. For scrambled eggs, whisk in a bowl first and pour into the skillet, stirring gently until cooked through.

Serving

  1. 8

    Plate the Hash

Divide the Kalua hash into bowls or plates. Top each serving with a cooked egg, and sprinkle with sliced green onions.

  2. 9

    Add Optional Toppings

If desired, add optional toppings like sliced avocado, Sriracha sauce, and crumbled feta cheese.
