Steak Preparation

    Sous Vide Cooking

    Season the New York strip steaks generously with salt and black pepper. Seal the steaks in a vacuum bag with olive oil. Preheat your sous vide water bath to 129°F (54°C) for medium-rare. Place the sealed steaks in the water bath and cook for 2 hours.

    Searing

    After the sous vide cooking is complete, remove the steaks from the bag and pat dry with paper towels. Heat a skillet over high heat and add a little olive oil. Sear the steaks for about 1-2 minutes on each side until a nice crust forms.

Mushroom Mousse

    Sautéing Mushrooms

    In a skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté until fragrant. Add the mixed mushrooms and cook until they are soft and all the moisture has evaporated, about 5-7 minutes.

    Blending

    Transfer the cooked mushrooms to a food processor. Add heavy cream, salt, and black pepper. Blend until smooth. If the mixture is too thick, add a little more cream to reach your desired consistency.

Basil and Chili Oil

    Making the Oil

    In a small saucepan, heat the olive oil over low heat. Add the fresh basil leaves and red chili flakes. Let the mixture infuse for about 10 minutes, then remove from heat and allow to cool.

Fried Shallots

    Frying Shallots

    Heat oil in a small frying pan over medium heat. Add the thinly sliced shallots and fry until golden brown and crisp, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
