Cooking the Rice

    Rinse the Rice

    In a fine-mesh strainer, rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat, then reduce to low and cover. Cook for 18-20 minutes, or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Preparing Ahi Poke

    Dice the Ahi Tuna

    Cut the ahi tuna into small, bite-sized cubes.

    Mix the Marinade

    In a bowl, combine the soy sauce, sesame oil, and diced green onions. Add the ahi tuna and mix gently to coat.

    Add Sesame Seeds

    Sprinkle sesame seeds over the ahi mixture and stir to combine. Let it marinate in the refrigerator for at least 15 minutes.

Making Sriracha Aioli

    Combine Ingredients

    In a small bowl, mix together the sriracha and mayonnaise until well blended. Adjust the spice level to taste.

Assembling the Poke Bowl

    Layer the Base

    Spoon the cooked sushi rice into bowls as the base.

    Add Ahi Poke

    Top the rice with the marinated ahi poke mixture.

    Finish with Toppings

    Sprinkle furikake arare over the top, drizzle with kobayaki sauce, and add a dollop of sriracha aioli.
