Prepare the Salad Base

Chop the Vegetables
Wash the romaine lettuce thoroughly, then chop it into bite-sized pieces. Halve the cherry tomatoes, slice the cucumber, red onion, and carrots thinly, and dice the avocado. Combine all vegetables in a large salad bowl.
Prepare the Chicken

Garlic Chicken Preparation
For garlic chicken, mince the garlic cloves and mix them with olive oil, soy sauce, and honey in a bowl. Marinate the chicken breasts in this mixture for at least 30 minutes.

Korean Chicken Preparation
For Korean chicken, mix gochujang, soy sauce, honey, and sesame oil in a bowl. Coat the chicken breasts with this marinade and let it sit for at least 30 minutes.

Cook the Chicken
Heat a grill or skillet over medium heat. Cook the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

Mix the Dressing
In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and black pepper until well combined.
Assemble the Salad

Combine and Serve
Pour the dressing over the salad base and toss gently to combine. Top the salad with sliced chicken (either garlic or Korean) and serve immediately.
