Preparing the Broth

Make the Broth
In a large pot, bring the chicken broth to a gentle boil over medium heat. Add soy sauce and mirin to the broth, stirring well to combine.

Prepare the Green Onions
Chop the green onions into thin slices, separating the green tops from the white bottoms.

Add Green Onions
Once the broth is boiling, add the white parts of the green onions to the broth. Reduce heat to low and let it simmer for 10 minutes.
Cooking the Noodles

Cook the Noodles
In a separate pot, bring water to a boil. Add the fresh saimin noodles and cook according to package instructions, usually about 3-4 minutes until tender. Drain and set aside.
Preparing the Toppings

Slice Char Siu
Thinly slice the char siu into bite-sized pieces.

Prepare Uzumaki
Slice the uzumaki into 1/2 inch thick pieces.

Blanch Kai Choy
In a pot of boiling salted water, blanch the kai choy for about 2 minutes until bright green. Remove and immediately place in ice water to stop cooking. Drain and chop into smaller pieces.

Assembling the Saimin

In serving bowls, place a portion of cooked saimin noodles, then ladle the hot broth over the noodles.

Add Toppings
Top with slices of char siu, pieces of uzumaki, blanched kai choy, and halved boiled eggs. Finally, garnish with the green tops of the green onions.
