Method

Pancake Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, granulated sugar, and salt. Whisk together until evenly mixed.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, eggs, and vanilla extract until well combined.

  3. 3

    Combine Wet and Dry Mixtures

Pour the wet mixture into the dry ingredients. Gently fold the mixture until just combined. Do not overmix; small lumps are fine.

  4. 4

    Prepare Pan

Heat a non-stick skillet or griddle over medium heat. Add the unsalted butter and let it melt, coating the pan.

  5. 5

    Cook Pancakes

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook the other side until golden brown, about another 2 minutes.

Haupia Cream Preparation

  1. 6

    Prepare Haupia Base

In a saucepan, combine the coconut milk, granulated sugar, and water. Stir over medium heat until the sugar dissolves.

  2. 7

    Thicken the Cream

In a small bowl, mix the cornstarch with a few tablespoons of the coconut mixture until smooth. Gradually whisk this mixture back into the saucepan.

  3. 8

    Cook the Haupia

Continue cooking the mixture over medium heat, stirring constantly, until it thickens, about 5-7 minutes.

  4. 9

    Add Flavor

Once thickened, remove from heat and stir in the vanilla extract. Let it cool before serving.
