Preparation of Ingredients

    Prepare the Beef and Vegetables

    Thinly slice the beef against the grain. Clean and slice the mushrooms. Chop the Chinese cabbage into bite-sized pieces and slice the onion into thin strips.

    Prepare the Sauce

    In a small bowl, combine soy sauce, mirin, sugar, sake, and sesame oil. Stir until the sugar is dissolved.

Cooking

    Cook the Beef

    In a large pan or skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced onion and sauté until translucent.

    Add Mushrooms and Cabbage

    Add the sliced mushrooms and chopped Chinese cabbage to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender.

    Add Beef and Sauce

    Push the vegetables to the side of the pan and add the sliced beef. Pour the sauce over the beef and cook until the beef is browned and cooked through, about 3-5 minutes.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up or to your desired doneness.

Serving

    Assemble the Gyu-Donburi

    Serve the cooked rice in bowls, top with the beef and vegetable mixture, and place a fried egg on top of each bowl. Garnish with sliced green onions and sesame seeds if desired.
