Prepare Meat

    Marinate the Meat

    In a bowl, combine olive oil, garlic powder, paprika, oregano, salt, and black pepper. Add the meat of your choice and coat it well with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Cook the Meat

    Preheat a grill or skillet over medium-high heat. Cook the marinated meat for about 5-7 minutes per side, or until cooked through and nicely browned. Remove from heat and let it rest for a few minutes before slicing thinly.

Prepare Vegetables

    Chop the Vegetables

    Dice the fresh tomatoes and sweet bell pepper into small pieces. Thinly slice the red onion. Set aside for assembly.

Make Tzatziki Sauce

    Prepare the Cucumber

    Grate the cucumber and gently squeeze out excess moisture using a clean kitchen towel or paper towel.

    Mix the Tzatziki

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt. Mix well and adjust seasoning to taste. Refrigerate until ready to serve.

Assemble Gyros

    Fill Pita Bread

    Warm the pita bread slightly if desired. Layer the sliced meat, chopped vegetables, and a generous amount of tzatziki sauce inside each pita.

    Serve

    Serve the gyros immediately, with extra tzatziki on the side if desired.
