Prepare the Crust

    Mix the crust ingredients

    In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined.

    Press the crust into the pan

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Make sure it’s compact.

    Pre-bake the crust

    Preheat your oven to 350°F (175°C). Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

Prepare the Cheesecake Filling

    Blend the filling ingredients

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until creamy.

    Add remaining ingredients

    Add the sour cream, eggs (one at a time), vanilla extract, and guava puree. Mix until fully combined and smooth.

    Pour filling into the crust

    Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center slightly jiggles.

    Cool the cheesecake

    Turn off the oven and leave the cheesecake inside for 1 hour. Then, remove it and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.

Prepare the Topping

    Once the cheesecake is chilled, arrange guava slices on top of the cheesecake.
