Method

Grilling the Pastrami and Onions

    Prepare the Onions

    Slice the medium onion into thin rings.

    Heat the Pan

    In a skillet, heat 1 tablespoon of olive oil over medium heat.

    Grill the Onions

    Add the sliced onions to the skillet and cook, stirring occasionally, until they are caramelized and golden brown, about 8-10 minutes.

    Add Pastrami

    Once the onions are done, add the pastrami to the skillet and grill for an additional 3-4 minutes until heated through.

Making the Mustard Aioli

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, Dijon mustard, minced garlic, lemon juice, salt, and black pepper until well combined.

    Taste and Adjust

    Taste the aioli and adjust the seasoning with more salt or pepper if needed.

Assemble the Sandwich

    Prepare Bread

    Toast the slices of bread on a skillet or toaster until golden brown.

    Add Cheese

    Place the grilled pastrami and onions on one slice of toasted bread and top with shredded cheddar cheese.

    Melt the Cheese

    Cover with the other slice of bread and grill the sandwich on both sides until the cheese is melted and the bread is crispy, about 2-3 minutes per side.

    Spread Mustard Aioli

    Spread the mustard aioli on the inside of the top slice before serving.

    Cut the sandwich in half and serve immediately.
