Sauté the Vegetables
While the steak is resting, slice the bell peppers and onion. Mince the garlic cloves. In the same grill pan, add a little more olive oil if necessary and sauté the bell peppers, onion, and garlic over medium heat until they are tender and slightly caramelized, about 5-7 minutes.

Chop Fresh Parsley
Chop fresh parsley and set aside for garnish.
Assembling the Chalupa

Slice and Combine
Thinly slice the rested steak against the grain. In a bowl, combine the sliced steak with the sautéed vegetables and fresh parsley.

Fill the Pitas
Warm the pita bread in a toaster or on the grill for a few seconds. Cut each pita in half and stuff each half with the steak and veggie mixture.

Add Cheese and Condiments
Top each filled pita with provolone cheese. Drizzle with mayonnaise and hot sauce to taste.

Grill the Chalupas
Return the stuffed pitas to the grill or grill pan over medium heat, pressing down slightly to melt the cheese. Grill for 2-3 minutes on each side until golden and crispy.
