Shrimp Preparation

Prepare the Shrimp
Peel and devein the jumbo shrimp. Rinse them under cold water and pat dry with a paper towel.

Cook the Shrimp
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Shrimp
Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes on each side until pink and opaque.

Add Lemon
Once the shrimp are cooked, add the lemon juice and remaining 2 tablespoons of butter. Stir to coat the shrimp evenly and remove from heat.
Rice Preparation

Cook the Rice
In a medium saucepan, combine the water and salt. Bring to a boil.

Add Rice
Once boiling, add the rice. Stir once, cover the pot, and reduce the heat to low. Cook for 18-20 minutes or until the rice is tender.

Fluff the Rice
Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork before serving.

Cook the Macaroni
In another pot, boil water and cook the macaroni according to package instructions. Drain and let cool.

Combine Ingredients
In a large bowl, combine cooled potatoes, macaroni, diced celery, and shredded carrots.

Add Dressing
Add mayonnaise, salt, and pepper to the bowl. Mix well to combine all ingredients. Refrigerate for at least 30 minutes before serving.
